Choc Chip Pancakes and Whipped Cinnamon Butter

20170308_084134Who doesn’t like for pancakes for brekky. My kids go crazy for them and once a week or two I make them. Previously we have put coconut or cinnamon in the batter but today we have used the delicious choc chip. My girls love helping me and they especially love when the sugar and the flour are mixed together, they just love putting their fingers in and yes the flour and sugar goes everywhere.

Today I decided to do whipped cinnamon butter. I have wanted to do this for a while, but just haven’t had the butter at room temp to be able to quickly whip it up. Its so easy to make and its delicious too.

When I went to Perth 2 years ago I ordered Apple loaf  from a cafe that we frequently visited (good coffee and milkshakes), it came with a side of whipped cinnamon butter. The the cake was warm, and when I spread the butter on I was amazed. Something so simple I haven’t tried before and it stuck with me. Yummy!

Unfortunately my girls wouldn’t try the butter, My kids love pancakes and it has to be maple syrup , no persuasion , only maple syrup!

I really love the flavours, the dark choc chip with cinnamon is a warming combo, kind of reminds me of the festive season. This definitely is a bit decadent and a little rich, but as an every now and then special breakfast its divine. A little bit of vanilla ice cream or a dollop of thick cream would also be quite nice.

The good thing about making a flavoued butter is you can adapt it to your tastes. If you look at the amount of butter used and think it wont be enough, just double or triple it. Also with the sugar and cinnamon just add more or less to your liking.

Choc Chip Pancakes

Ingredients                       makes 12-15

  • 1 1/2 cups Self Raising-Flour
  • 2 tbs Sugar
  • 1 cup Milk
  • 60g Butter, melted and cooled
  • 1 egg
  • 1/4 cup ( or more) Choc Chips
  • Extra butter for frying pan.

Place Sugar and Flour in bowl, mix together and make a well in the middle. In a separate bowl or jug, mix together milk, egg and cooled melted butter. Place the wet ingredients in the well of the dry ingredients. Mix together. Add choc chips and stir through. Heat frying pan on medium and grease with butter and place spoonfuls of batter into frying pan wait till bubbles show and flip. The pan may get too hot after first or second batch so remember to turn the heat down. If you think the batter is too thick just add milk a little at a time.

Whipped Cinnamon Butter

  • 70g  Butter, room temperature
  • 1/4 Icing Sugar
  • 1 tsp Cinnamon.

Put in a bowl and whisk together, or use a hand mixer or stand mixer.

Dollop Whipped Cinnamon Butter on the warm Pikelets and watch it melt.

  2. I had never heard of a pikelet before this. Looks a tad thicker than a US pancake? This is one of the perks of the blogging community. They look scrumptious, can’t wait to try the recipe and see what I’ve been missing out on! ❤️
