Yes Banana Bread, it’s a very popular recipe with many variations and is a staple in most cafes. I love banana bread warm or toasted smothered in butter served with a latte or hot chocolate. Whipped cinnamon butter also tastes quite nice smothered on top.
I always make this with my girls and they love it. When my 4 yr old sees old bananas in the fruit bowl she automatically asks to make Banana Bread and most of the time we do.
This recipe is quick and easy. I only had 2 over ripe bananas when I made this time and It still came out nice but 3 bananas gives it more of a banana taste. Most of the time we add coconut I think banana and coconut go so well together and the girls just love adding coconut to everything. Also if don’t want to use coconut can add 1tsp of cinnamon.
I used and 8 x 20cm loaf tin but I have made these as muffins and worked well.
Banana and Coconut Bread
Ingredients
- 3 over ripe bananas
- 85g melted butter
- 1 cup of sugar
- 1 egg, beaten
- 1 tsp of vanilla
- 1 tsp of baking soda
- pinch of salt
- 1 ½ cups of plain flour
Variations
- ½ cup of desiccated coconut Or
- 1 tsp cinnamon
Method
Pre-heat oven 180C, grease and line with baking paper a 8 x 20 cm tin.
Mash bananas with a fork.
In a bowl place bananas, melted butter, sugar, egg, vanilla and mix until just combined.
Add baking soda, salt and flour then mix until combined.
Place into prepared tin and bake for 50 min to 1 hr.
