Chocolate Chip Cookies

I love Chocolate chip cookies! I love them warm and crispy around the edges and soft in the middle. Something so delicious should not be so easy to make and raw cookie dough is just as good! My favorite is dark chocolate chips and the ultimate is triple choc cookies.

I have made different recipes but I love I can make them with melted butter and not have to beat the butter first. This has been my go to recipe for a while, its quick easy and delish. The recipe does say to sift flour and baking soda but sometimes I just cant be bothered sifting and it can be messy, but I always sift the baking powder just in a little sifter because having a chunk of baking powder in the cookies is very unpleasant.

When I make the dough its usually for a treat and I don’t use all the dough. I wrap the left over dough in cling wrap and put it in the freezer for later use.  I usually roll it into a log so I just cut what ever portions I need. You can freeze in any way you prefer, in balls on a tray or container so all you have to do is pop 1 or 5 in the oven when needed. The time straight from freezer is only an extra minute or two in the oven.

Ice cream sandwich with cookies and cream ice cream. Best eaten straight away when cookies are still warm.

 

Chocolate Chip Cookies

Ingredients

  • 125g butter, melted
  • 1 cup brown sugar
  • 1/4 caster sugar
  • 1 egg, lightly beaten
  • 1 tsp vanilla essence
  • 1 cup self-raising flour
  • 3/4 cup plain flour
  • 1 tsp baking powder
  • 1 cup of your choice chocolate chips

Method

Preheat the oven to 160°C.

Place butter into a large bowl and stir in brown sugar and caster sugar until smooth and sugar is mostly dissolved.

Mix in beaten egg and vanilla.

Sift flours and baking powder into mixture then mix until combined.

Stir through chocolate chips.

Place tablespoons of the cookie mixture onto lined baking trays.

Bake for 12 minutes or until golden then remove from oven and allow to cool on tray.
