This was an easy recipe I made last Easter but It’s great to use for any occasion. It was Nanna Burns birthday on Easter Sunday so we decorated it with bunnies and chocolate eggs. I needed something easy but didn’t want to make it from a cake pack so thought this would be a great one to try.
I made this in the morning and thought I was doing great with my time management, I separated the mixture into 3 cake tins each a different colour and I thought the cakes would have plenty of time to cool and I can spend plenty of time to decorate. Ha! That was not going to happen, I put 3 cups of plain flour and 1 cup self-raising instead of 3 cups self-raising and 1 cup of plain. So, my cakes came out as 3 beautifully coloured pancakes.
Well I did make it again, I had just enough eggs and it risen as it was supposed to.
To decorate I made a strawberry butter cream icing with some pink colouring. While assembling the cake I used a circle cookie cutter to make a whole in the center of the middle cake layer, then I put some treats in so when the cake is cut there is a sweet surprise.
I will use this recipe again. The original recipe is as one cake and it makes a big cake so it was perfect for me divide into smaller cakes.
Easy One Bowl Vanilla Butter cake
Ingredients
- 3 cups self-raising flour
- 1 cup plain flour
- 2 cups caster sugar
- 6 eggs, at room temperature
- 300g butter, cubed, at room temperature
- 1 1/4 cups of milk
- 3 teaspoons vanilla essence
- Melted butter, to grease
Method makes 1 big cake
Preheat oven at 140’C, grease and line round 25cm tin.
In a large mixing bowl place self-raising flour, plain flour, sugar, eggs, butter, milk and vanilla essence.
Use mixer or electric beater on low speed until all the ingredients combined then change to high speed until mixture is thick and butter is mixed in ( about 1-2min)
Pour mixture into prepared tin and cook at 140’C for 2 1/2 hrs (change time if dividing batter into separate tins) or until skewer inserted in center cake comes out clean. After 10 min turnout on to cooling rack to cool completely before icing and decorating.
