Easy Whole Orange Cake

So many delicious looking oranges about and that is why I am going to make this Easy Whole Orange Cake. This recipe is super easy and quick, place all the ingredients in to a blender and you’re done. I have made this years ago and it was a hit. The cake is moist and full of flavour while the orange icing is delicious which adds a sweet orange explosion.

I do have another Orange cake recipe that does not use the whole orange which is still super tasty, but the quickness of this recipe is awesome and you still have a quality cake at the end.
I could not stop dipping my finger into the icing bowl. This icing is so good and would taste great on top of a sugar cookie or shortbread.

Easy Whole Orange Cake

  • 1 orange skin on
  • 180 g butter melted
  • 3 eggs
  • 1 cup caster sugar
  • 1 1/2 cups self-raising flour

Icing

  • 2 1/2 cups icing sugar
  • 2 tbs butter melted
  • 1 orange juiced and zested
  1.  Preheat oven to 180C’ and grease and flour ring pan.

  2. Cut orange in to chunks then place in food processor and puree until smooth.

  3. Add the remaining ingredients into food processor and mix until well combined.

  4. Bake for 40-45 minutes or until skewer comes out clean. Cool in tin for 10 minutes then turn out on cooling rack. Once cooled spread on the Icing. 

Icing

  1. Mix icing sugar, butter, zest and half of the orange juice together and keep adding little bits or remaining orange juice until you get the consistency you like. I like to make my  icing runny so it drips down the side of cake.
