White Chocolate and Coconut Truffles.


These little beauties are delicious and super easy. Only 3 ingredients and you can freeze them. Make a batch now and take them out the night before you need them.

I have made these for Christmas this year. Previously I have used them as decoration on cakes. You can also use them as decoration on deserts like chocolate mousse or cheese cake or on the side of hot chocolate.

They  are melt in your mouth treats that will sure to please any white chocolate lover.


White Chocolate and Coconut Truffles                     makes about 15-20

200g white chocolate

1/4 cup Heavy Cream

1/4 cup Desiccated coconut + 1/3 cup for rolling


In a microwave heat proof bowl put in the chocolate and cream. Heat in 10-20 second intervals and stir until smooth. Alternatively can use a bowl over a saucepan of simmering water to melt chocolate and coconut.

Mix in Coconut.

Put in fridge for 4 hours to completely chilled.

Using a teaspoon scoop mixture and roll in to balls, then roll into coconut.

Storage- Keep in air tight container in the fridge up to a week or in freezer for a month and thaw in fridge the night before eating.
